I am planning on running two sets of Orion 5.5 inch coaxial speakers and running them off a Phoenix gold QX 2180 amp (2 channel ,50 rms a channel). I'm wondering what the best way of wiring them is so I get the maximum amount of watts without harming my amp. I'm also going to install a US acoustics amp bridged mono 300 watts rms to a kicker 8" comp sub. Do you think my sub is going to overpower the front speakers? I'm sticking all this into a 93 nissan regular cab truck. Any advice would be greatly appreciated.

Wire up the QX in 2ohm stereo (2 speakers per side).
The sub will match fine with proper gain and crossover settings.

Speaking of crossover frequency, I'm wondering where I should crossover my 8" at. I listen to mostly hip hop, electronic, and punk.

Probably around 80hz should be fine. Just listen to your music through it, and tweak it until it sounds right.
