i currently have a 10 running off a 500 watt kaption amp, if i upgraded to a 12 would i notice much difference in quality, or would it be much louder?

In a word.....no.

If you also went from a sealed 10" to a ported 12" you would hear a difference for sure.....personally I would try a ported box for the 10" before I bought a driver 2" larger than the one I already owned, but that's just me......

Without personal experience of those models, I would think the 12 would just peak at a lower frequency.
