Anyone shed some light on this strange problem?

I have an older 5ch soundstream amp (rubicon 255).
In 5ch mode, ch 1 cuts in/out when you press on the gain ****.
When the amp is in 3ch mode, no problems.

For 3 ch mode, you use - ch 1, and + ch 2...

Any ideas?

The amp works fine in 3ch mode, and so that is what I am running it as....

could be the pot or it could be cold solder joints
are the rca connectors close to it
it could have a bad connection
if its a cheaper pot it could just be dirty
try spinning it to see if it crackles and cuts out

The RCA's are right beside it. When I wiggle the RCA it also casues the problem (which at first led me to belive a bad RCA cable - and then after I pulled it out and ran a new one---I found out the real problem)

When I turn the **** it doesn't make any sound (other than adjusting the gain).

The ch will not work, then I press on the gain pot- and it works again.

Why does this only affect the amp when in 5ch mode?

Because in 3 channel mode it is probably drawing the signal from another rca input. It sounds like a minor repair job to the ground of the rca input. This is usually caused by an rca cable stretched hard or someone has bumped the rca where it was plugged into the amp.
