No need to remove the old wire because it is the one with the fusable link on it that goes from the alternator to the starter and then to the battery. If you are upgrading the wire to zero guage from 4 guage to allow for more current from the alternator to the battery, another stock wire that is also carrying current is not going to hinder the process at all but compliment it.
So if you want to replace the stock wiring, sure go for it. You can, just remember to upgrade and fuse the wire going from the battery to the starter as well......

No, you don't need to replace it, or any of the Big 3. You need to ADD cabling. Leave the stock stuff there, don't disconnect it, just add your welding cable as an additional path. The actual bat to starter cable isn't really necessary to upgrade, although your overall system may be happy for it.
Yes, you really need to fuse the alt to battery cable.

I am also looking to get a battery too, I got different opinions, some people say yellow tops are great, but too expensive. other say the diehard gold is just as good and half the price, other people say go with exide as its a little cheaper than yellow top and much MUCH better battery than the optima. LOL, this is getting confusing now.

and you can mount it upside down if you want.
Red top gives you more output (I have witnessed a 1-3 db increase in some systems), but it will not put up with extreme abuse like above
