I'm more of a home audiophile/sonic purist than with what I listen to in my car but I'll try helping you. Specific songs might be a more personal taste. Aside from the private audiophile label releases, here's a few commercial albums known for superior recording techniques to pick songs from:
Sting - All This Time (one of the best live - although all recent albums are good)
Jack Johnson - In Between Dreams (good vocal)
Michel Buble - It's Time (huge orchestral dynamics)
Pink Floyd - The Wall (remastered release)
Nickel Creek - Why Should The Fire Die (audiophile acoustics)
Sarah McLachlan - Surfacing (enhanced release)
Fleetwood Mac - The Dance (only the best of systems can pull off Big Love at concert level)
Dixie Chicks - Home (if you're into audiophile country music)
Dave Brubeck - Take Five (one of the greatest remastered jazz recordings of all time)
Neil Young - Unplugged (also Sleeps With Angels)
Rush - Moving Pictures (24-bit gold remastered release)
Rage Against The Machine - Rage Against The Machine (amzing clarity in hardcore!)
...all are in my collection. There's tonnes more, I just can't think of at the moment. Will post more if anyone would like me to.
Although many people are suggesting Dire Straits, their albums all utilize a compression process which yields artificial clarity and reduced dynamics. You'll have to listen for yourself to determine if you like their sound.
Generally speaking, you can also keep an eye out for more recent albums that have been re-mastered to 24-bit or SACD. This is a good indication that these newer recordings have resulted in quality that is worthy of the process.
