I'm planning on putting in 2 subs, each with it's own amp. The amps are Alpine MRP-M500, and they can run 500 RMS. I am wondering what would be the best size power/ground wire. All the kits I've found so far for 2 amps are 4 AWG splitting into 8 AWG. Not sure if that is too small or not.
This is a great kit for your needs:

your inline fuse must be as large, if not larger than the two distoblock fuses.
eg. a 200A inline fuse means you cannot have more than 200 amps combined in your distroblock.
i suggested 200A and 100A in the distro because this will allows you some headway if you ever decide to go larger.

What I meant was if the amps are only 60 amps, why can it not be lower, like 2x 75 and 1 x 150? or something along those lines. Or is it just easier to go 2 x 100 and 1x 200?

As long as there is enough of a rating to supply what is being drawn, then you would be fine. Keep in mind though, not all amperage ratings are available, and especially not in all the different types of fuses you may need.
I will agree with the above mentioned 2x100 and 1x200 in case you ever want to upgrade in the future. For wire size, i would use a minumum of 4ga. in those.
I have a question and sorry to thread jack, but why are you using two amps for two subs when one amp would serve the same purpose and probably be a more economical choice (the MRP-1000)? I dont think that those amps are strappable so wouldn't you need to be very accurate with your settings? As well, not all amps are built the same so i think it would be near impossible to mirror them without the use of extra tools. Also, you now have to buy extra fuses and distroblocks as well as more wire.
