That's what I thought too until I looked in to it more, you can actually bet on a bunch of different things.
Ball to land on black or white
Ball to land on a certain #
Ball to land on 2 certain #'s
Ball to land on a number above/below a certain #
Ball to land on 0 or 00
I think that's the gist of it. I have friends who go and put down $500 on black. Basically double or nothing, that's a bit much for me.

There are lots of ways to bet. Like has been stated you can bet on (odds may not be exact on all of them):
1. individual numbers - 34 to 1
2. 2 numbers - 16 to 1
3. 4 numbers - 8 to 1
4. row - 16 to 1
5. zero's - 35 to 1
6. first 12 - 2 to 1
7. second 12 - 2 to 1
8. third 12 - 2 to 1
9. first column - 2 to 1
10. second column - 2 to 1
11. third column - 2 to 1
12. first half - 1 to 1
13. second half - 1 to 1
14. odd - 1 to 1
15. even - 1 to 1
16. red - 1 to 1
17. black - 1 to 1
the odds work as the number of chips (dollars) you get for a bet. So if you bet $1 on 18 and it hits you get $34 plus your original bet of $1 back. If you bet on red and it hits you will have $2 total now.
Also remember that you can place as many bets as you want as long as you do it before the dealers calls no bets. You can basically pick your odds and either have good odds but low payouts, or have bad odds but big payouts.
Casinos will have sheets that they give out that show the layout of the wheel and the bets and odds. They even let you use a pencil of the sheet to mark which numbers have hit and such.
