I think the warning is just to keep the system in phase.
Unless, the sub is DVC. Do not wire the coils of a DVC opposite of each other, because the two coils would work against eachother giving zero output, creating heat from the power applied and no movement to cool the sub.
Also they probably warn against reversing the phase incase you have multiple subs. If both subs are mounted the same way (both inverse or regaular) and one sub is wired opposite to the other sub, then they will cancel eachother out.
There is no reason why a particular sub cannot be inverse mounted.

With regards to polarity, how can you determine if a sub is suitable to have it's polarity reversed? With some drivers I have owned they warn you not to switch polarity on the voice coils. Is this just to prevent people from throwing their system out of phase or is there a possibility of damaging the sub?

Just a for what its worth: I did a install on a 99 Acura Integra single 12" ported and it is inverted, I metered it and then turned sub in normal way and hit the exact same number only played a little different frequency being the sub took a bit of displacement in the box.
It sounded exactly the same and metered the same, so I say inverted or normal exact same for SPL.
This was my findings anyhow.

Does anyone have a diagram how i would wire 2 dvc 2ohm subs for a 2ohm load with one driver phase reversed?
I think I could manage on my own, but it would be great to have something to reference...

I don't have a diagram, but I can tell you simply enough. Both 2 ohm coils on each sub will be wired in series to give you a 4 ohm load. one sub will be wired to the amp's mono channel + to +, - to -, the other sub will be + to -, - to +.
