Can I run this amp off of a single pair of RCA's in?

Yes you can ...

You won't necessarily lose fading capability, but you will have to manually "fade" from the back by turning down either the front or rear gains.

Regardless of whether you use Ycords or not, if you have only one RCA going to the amp, then you will not have any remote fade capability.
