I'd actually probably take the picture in color, and then oversaturate it. Something about a head and shoulders against a watery background doesn't suit itself ... light gray against dark gray? not enough contrast

unless of course i had the super low angle shot. Maybe even with my camera half immersed so you can see the futility of his limbs beating against the current! Mwahahah!

 

B/W If it's in the camera!

 

i think b/w is the only true way to capture the look of the peoples faces, as the point and laugh at bush. b/w gets my vote.
