What if a competitor had one in the centre console as well but had it disconnected when competing so they were solely competing with whats in the trunk/back, would they still bump them to extreme?

I think you might still be bumped to extreme, because it says that you can't have any mods done in front of the B-pillars.

But I bet if you are just a local competitor and it's not a 2X or 3X show your judge might not care, and let it slide.

to answer the original question... having a pair of subs in the trunk and a 3rd in a centre console ...generally would cause you to hit lower SPL #'s unless properly phase alligned with the subs in the trunk or vise versa as to allow the sound waves to arrive at the measurement device at the same time...common practice when competing is to make sure all other speakers in the vehicle are shut off to help prevent sound waves to be reproduced from different areas of the vehicle other than from the subs to reduce "out of phase" wave cancellation

I'd say you're about 99% correct.

You are allowed to add any commercially available center console for the street class.

Rule 6-7g: Commercially available center consoles are acceptable provided they displace less than 2 cubic feet of air. “Custom” or homemade center consoles are prohibited.
For super street the rule is a bit different.

6-9c: Center consoles that displace less than 2 cubic feet of air space are acceptable. (Both commercially available and custom or homemade consoles are acceptable.)
So your buddy that was in SS and wanted to build a center console would have been able to do it so long as it didn't displace more than 2 ft^3.
