If I had a system like that, I would not hesitate to do a complete re-haul including wiring. Your options are endless. You cab get a million suggestions. SQ or SPL?
Electrical: 2-4 gauge power and ground wire. Good dry cell battery. Good working alternator (around 120 amps would be reasonable). Good speaker wire. I am personally a strong believer in overkill. Bigger wires than needed for everything.
Here is a link to give you an idea on brands.

As for subs, if you like SPLing I always suggest TREO or Digital Designs. Their subs are loud, and still retain good sound quality. If you like SQL, than Image Dynamics, Stereo Integrity, Resonant Ingineering, Arc Audio, JL Audio, among several others. I have Stereo Integrity MagD2, and I could not have been more impressed with it. Just needs at least 750 wrms.

You're off to a great start. That Infinity amp will be a good improvement on your quality gear as that Kenwood is rather anemic.
You didn't mention what HU you're using. If the one you're using is capable of all the processing and specs you need then great. If not it might be a place to upgrade or you may want to add an external processor if required.
Add a quality sub and amp. Output, enclosure, power, and space requirements will narrow down the choices.
You will want to upgrade your wiring. 8g is fine for that Kenwood but the big Infinity is going to want some 4g and if you're adding a sub amp you might as well go bigger.
