Can you even power 2 subs with a one channel amp? Probobly a dumb question, like I said before, I know nothing about this stuff

I'd try just the one amp with the subs in a properly built box and see if that's enough for you, if it's not, you can always pick up the second amp that you were going to buy anyway.

depending on the voice coil configuration yes, if your type R's are dual 2 Ohm they can be wired to be powered by one amp.

Get a properly built box !! <---important
and I'd get the dual 2 Ohm versions of the subs (1222 or something like that)
and maybe a small amp for the front end (if you care) and run some 1/0 awg wire to a distro block.
wire the subs up to show a 4 Ohm load to each amp (the pdx does same power at 4 and 2 Ohm).
you will have a little more power than you need (or alot) so set the gains properly or you'll be sub shopping again.
