That is the correct way to wire parallel and you've come up with the correct impedance for wiring two 2 ohm subs in parallel.
Both set ups mentioned above will feed 500 watts to each driver so you will not get more power from either setup. One thing to look into is the THD of the amps at the suggested impedance level. The higher the THD the worse it will sound (Although, I've been told that the human ear won't hear the difference until the amp is driven into clipping).
