I picked up a Jetta parts car last tuesday. and it has a real leather stitched steering wheel that I want to switch.

How hard is it to take out a steering wheel?

usually the horn assemly is screwed on from behind or it just pull out
then there is usually a nut you remove
some have a snap ring under that too and
sometimes you need a puller

It's not that hard if you use a steering wheel puller.
Pretty cheap investment that will save you some grief.
