Question

The other day I go out to start my car and nothing, I've checked everything out and it comes down to me getting a new 140 Amp alternator to replace the old 78 amp original, just wondering if since im upgrading my alternator i should go about replacing the fuse and getting something a bit bigger for the power to my amp, which is curently a 60 amp fuse, also wondering if im missing something else that might help my electrical system in my old 87 Monte Carlo such as upgrading ground(s) and other wiring

Any help would be greatly appreciated

Yep, there's lots you should do.

Swing by the shop sometime for a coffee and I can point and suggest things for you to do...
